Lemon Blueberry Trifle
This light dessert is perfect for Mother’s Day or any get-together!
The combination of lemon and blueberry makes for a tasty warm weather dessert.

It has layers of fruit, cake, and pudding. Unlike Friends, I left out the ground beef.
The Ingredients
Angel food cake: A lot of trifle recipes use sponge cake. I used angel food cake because it was a little lower in points.
Lemon instant pudding mix (sugar free): Regular lemon pudding mix is 20 points, but sugar free pudding is only 4 points. That helps to save 16 points.
Fat-free skim milk: This has fewer points than regular milk and I can’t tell a difference.
Blueberries: The blueberries add flavor, color, and texture to the dessert.

How to Make a Lemon Blueberry Trifle
Not only is this dessert delicious, but it’s also easy to make.
The first thing I did was prepare the pudding.
Add the instant pudding mix to a medium mixing bowl. Pour in two cups of fat-free milk and whisk for 2 minutes.
Cut the angel food cake into 1″ pieces.
Add half of the angel food cake to a trifle bowl. Top the angel food cake with half of the blueberries.
Spread half of the pudding over the angel food cake and blueberries.
Repeat another layer of angel food cake, blueberries, and pudding.
Top the second layer with 8 ounces of fat-free Cool Whip.
I like to add fruit to the top layer of my trifle.

Lemon Blueberry Trifle

Ingredients
- 13 oz. angel food cake
- 1 (1.34 oz.) box sugar-free lemon pudding mix (instant)
- 2 cups fat-free skim milk
- 1 pint blueberries
- 8 oz. fat-free Cool Whip
Instructions
- Add the pudding mix to a medium mixing bowl. Pour in the milk and whisk for 2 minutes.
- Cut the angel food cake into 1" pieces.
- Add half of the angel food cake and half of the blueberries to the trifle bowl.
- Spread half of the pudding over the cake and blueberries.
- Repeat a second time – angel food cake, blueberries, and pudding.
- Spread the Cool Whip in a nice even layer.
