What is PB2 Powder?
PB2 powder is a great alternative to regular peanut butter.
The manufacturing process involves extracting nearly all the natural oils from roasted peanuts and then grinding what’s left into a fine powder.
Here’s the exciting part – this method gives us a peanut butter product that boasts 85% fewer fat calories than its conventional counterpart.
And the versatility of PB2 is another reason why it’s the perfect peanut butter replacement.
It works wonderfully in a variety of dishes, from smoothies to baked goods, and of course, in these delicious Peanut Butter Chocolate Pancakes.

Gathering Your Ingredients:
Here’s the starting lineup for your Peanut Butter Chocolate Pancakes: PB2 Powdered Peanut Butter, all-purpose flour, baking powder, salt, egg, skim milk, your preferred sweetener, and sugar free chocolate syrup.
These are the main characters in our breakfast story, but as in any good tale, we have a supporting cast. Optional extras include toppings such as fresh berries, yogurt, a sprinkle of your favorite nuts, or a sweet drizzle of honey or maple syrup.
How to Make Peanut Butter Chocolate Pancakes:
Start by adding the dry ingredients to a mixing bowl – all purpose flour, granulated Splenda (or sweetener of choice), baking powder, and salt. I used a whisk to blend the ingredients.
In a separate bowl add the PB2 powder and water, then mix together. It should have the consistency of melted peanut butter.
Now add the egg, milk, and vanilla extract to the PB2. Once it’s mixed together, pour it into the dry ingredients and stir together.
Make sure you don’t overstir the pancake batter, it’s ok if there are a few lumps.
Heat a nonstick skillet over medium-low heat. Spray with cooking spray and add 1/4 cup of the pancake batter.
Once bubbles start to form, it’s time to flip the pancake. Let the pancake cook on the other side until it’s golden brown.
Repeat until all of the pancakes are made, you should have 8 pancakes.
I drizzled sugar-free chocolate syrup onto the pancakes, making them Peanut Butter Chocolate Pancakes.
