How to Make Bell Pepper Egg Boats:
Start by slicing the bell peppers in half lengthwise and remove the seeds and membranes. This will create a hollowed-out space for the eggs.
Place the bell pepper halves in the air fryer basket, cut side up. Make sure they are stable and won’t tip over.
Crack an egg into each bell pepper half, being careful not to overflow the egg.
Sprinkle some shredded cheese over each bell pepper. I used reduced-fat Mexican cheese.
Season with salt, black pepper, and garlic powder.
Carefully place the air fryer basket back into the air fryer and cook the bell pepper egg boats for about 10-12 minutes or until the eggs are cooked to your desired level of doneness.
Once cooked, remove the bell pepper egg boats from the air fryer and let them cool slightly before serving.

- 1/4 cup reduced-fat Mexican cheese, shredded
