In a shallow bowl, whisk together the eggs, milk and vanilla extract.

Next, heat up a nonstick skillet and spray with nonstick cooking spray.

Take a slice of bread and dip it into the egg mixture, making sure to coat both sides. Then dip the bread into the crushed cereal, making sure to coat both sides.

Cook until the bottom is golden, then flip and cook the other side until it is golden brown and crispy.

Repeat with the second piece of bread.

This recipe can easily be doubled or tripled to feed a crowd.
