This is another easy weeknight meal that’s full of flavor!
I was able to keep this recipe low in points by using turkey sausage and leaving out the oil.
You could also use chicken sausage just be sure to doublecheck the points.

There are four servings, each serving is 1 1/2 cups.
How to make Tomato Sausage Pasta:
I started by boiling 6 ounces of uncooked ziti in a large pot of salted water. I cooked it according to the package directions, until the pasta was al dente.
Using a food scale is the most accurate way to make sure you’re using the correct amount.
When the pasta is done cooking you will want to reserve 1 cup of the pasta water. We’re going to add some of it to the dish later.
The pasta water is filled with salty, starchy goodness that will add lots of flavor to the pasta dish.
Add the turkey sausage to a large skillet and brown the meat over medium heat. Break up the sausage into small pieces while it cooks.
Next I add the cherry tomatoes and garlic. I let that cook 5-10 minutes, once the tomatoes start to break down.
Stir in the tomato puree and seasonings, then add the pasta water.
Although I reserved 1 cup of pasta water I only needed 1/2 cup. Add the pasta water and spinach.
Cook until the spinach is wilted then add in the pasta. Mix everything together and top with grated Parmesan cheese.
You can use any type of pasta you want. Penne pasta and bow tie pasta are good options too, just make sure the points are the same.


Yield: 4 servings (Each serving is 1 1/2 cups)

- 6 oz. uncooked ziti
- 8 oz. turkey sausage
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 1/4 cup tomato puree
- 1 cup baby spinach
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Reserve 1 cup of pasta water
- 1 tablespoon grated Parmesan cheese

Bring a large pot of salted water to a boil. Cook the ziti according to the package directions. Reserve 1 cup of the pasta water before draining the noodles.

Add the turkey sausage to a large skillet. Brown the sausage breaking it up while it cooks.

Add the cherry tomatoes and garlic to the sausage. Cook over medium heat until the tomatoes are soft and breaking down, 5-10 minutes.

Mix in the tomato puree and seasonings then add 1/2 cup to 1 cup of pasta water. Add the spinach and cook until the spinach is wilted.

Stir in the cooked ziti and top with Parmesan cheese.

If you don't like your food spicy you can omit the red pepper flakes.
