This Chicken Teriyaki Ramen is a tasty meal that’s ready in about 20 minutes!
If you’re looking for an easy meal that tastes delicious you’ll want to try it.
Plus it’s much lower in points than Chinese takeout.

We pretty much always have ramen noodles because my kids love them. I can’t really say I’m a fan of the seasoning packet but I do love the noodles.
Actually I’m a fan of any kind of noodles. 🙂
I love coming up with recipes using the ramen noodles. For one thing they’re very inexpensive – about $.25 a pack.
Chicken Teriyaki Ramen is a great recipe for leftover chicken or you can buy a rotisserie chicken from the store.
Here’s what you need to make Chicken Teriyaki Ramen:
- Cooked chicken
- Ramen noodles (1 pack)
- Reduced sodium soy sauce
- Water
- Rice vinegar
- Brown Sugar
- Garlic
- Ginger
- Cornstarch
- Broccoli
Making this dish is very easy. I started by spraying a pan with olive oil spray and adding the garlic. Let that cook for about 30 seconds.
Next I added the soy sauce, water, rice vinegar, brown sugar and ginger.
In a small bowl I mixed together the cornstarch with a tablespoon of water, stirred it together then added it to the pan.
Make sure to stir the sauce to mix in the cornstarch then add the chicken.
I broke the ramen noodles in half (so the block was thinner) and added it to the pan. Cover the pan with a lid and cook on low for 10 minutes, or until the noodles are done cooking.
The noodles will absorb some of the liquid so I added 1/4 cup of water before adding the broccoli.
Stir in the broccoli and serve. It’s an easy 20 minute meal!


Yield: 2 servings (Each serving is about 2 cups. For blue and purple it's 9 points per serving, green is 12 points per serving.)
- 2 cups cooked chicken, shredded
- 2 cloves garlic, minced
- 3/4 cup reduced sodium soy sauce
- 1/2 cup water, divided
- 1/4 cup rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon ginger
- 2 teaspoons cornstarch
- 1 pack ramen noodles (discard seasoning packet)
- 2 cups broccoli (steamed)

Spray a pan with olive oil and add the garlic. Let cook for 30 seconds.

Add the soy sauce, 1/4 cup water, rice vinegar, brown sugar and ginger to the pan.

Add the cornstarch to a small bowl and stir in 1 tablespoon water. Add the cornstarch mixture to the pan and stir. Add the chicken to the pan.

Break the ramen noodles in half and add them to the pan. Cover the pan with a lid and cook on low for 10 minutes, stirring half way through.

Once the noodles are cooked stir in the broccoli and serve.
