These Salad Kabobs are so cute! They’re perfect for an appetizer or a light lunch.
They’re only 1 point each for blue and purple, 2 points each for green.
They’re also great for meal prep!

With blue and purple the only thing on these Salad Skewers that adds points is the cheese.
I cut each piece of cheese into .5 ounce which is 1 point.
For green the turkey and eggs also add points.
Boar’s Head smoked turkey breast is what I used for the meat. I did one slice of turkey for each kabob, using 5 ounces all together.
If you follow green you will want to double check the points if you use a different brand of turkey and/or a different amount.
Here’s what you need for the Salad Kabobs:
- 1 head of lettuce
- Cherry tomatoes
- 5 ounces of turkey breast
- Cucumber
- 5 ounces of part skim mozzarella cheese
- 5 eggs
Whether I’m serving these as an appetizer or eating them for lunch, I like to add a low point salad dressing.
I like the Skinny Girl Balsamic Vinaigrette Dressing. You can have two tablespoons for 0 points. Four tablespoons is only 1 point.
Reduced fat ranch dressing also goes great with the Salad Kabobs.
You can arrange the kabobs however you like. I like putting cherry tomatoes on both ends because it gives it a nice pop of color.
I made my kabobs by adding a cherry tomato, wedge of lettuce, turkey breast, cucumber, mozzarella cheese, 1/2 of a hard boiled boiled egg, another wedge of lettuce and another cherry tomato.

You can serve them right away or keep them in the fridge until you’re ready.
That’s why they’re also great for meal prep! Just keep them in a sealed container or wrap them in saran wrap.

Yield: 10 kabobs (1 point each for blue and purple, 2 points for green)

- 1 head of iceberg lettuce
- 20 cherry tomatoes
- 5 ounces Boar's Head smoked turkey breast
- 1 English cucumber
- 5 ounces part skim mozzarella cheese
- 5 hard boiled eggs (cut each one in half)
- 10 wooden skewers

Cut the iceberg lettuce into wedges. Do not separate the wedges.

Cut the cucumber into slices.

Cut the mozzarella cheese into .5 ounce pieces.

Place the ingredients on the wooden skewer starting with one cherry tomato, one wedge of lettuce, a slice of turkey breast, cucumber, mozzarella cheese, half of a hard boiled egg, another wedge of lettuce and cherry tomato.
