These taco stuffed shells combine two of my favorite foods…Italian and Mexican!
It’s also a filling, low point meal. Each serving is 6 points which is about 4 stuffed shells.
The points are the same for blue, green and purple!

They’re also easy to make. I started by cooking the shells. While those were cooking I started browning the ground beef.
I drained the ground beef and added taco seasoning and water. I let that cook for 6 minutes.
Next I added 1 cup of salsa and 1/2 cup Mexican cheese to the ground beef. I stirred it until the cheese was melted and turned off the heat.
Each shell was stuffed with the meat mixture then put into a baking dish sprayed with cooking oil.
I topped the shells with more salsa and cheese then covered it up. I baked it in the oven for about 15 minutes, once the cheese was melted.
To serve these taco stuffed shells I like to add some fat-free sour cream and green onions.
Feel free to add whatever toppings you like! Cilantro is another great topping.
Just be sure to add any additional points if necessary.
This is a recipe the whole family will like! My younger daughter doesn’t like tacos but she loved this!

Yield: 10 servings (4 stuffed shells per serving – 6 points for blue, green and purple)

- 1 (12 oz.) box of jumbo shells
- 1 lb. 95% lean ground beef
- 1 packet of taco seasoning (plus 2/3 cup water)
- 1 1/2 cups fat free salsa, divided
- 1 cup reduced fat Mexican cheese, shredded, divided
- fat-free sour cream and green onions

Preheat oven to 350 degrees F.

Cook shells according to the directions on the box.

Brown the ground beef and drain any fat. Add the taco seasoning and water then cook on medium heat for 5 minutes. Add 1 cup of salsa and 1/2 cup of Mexican cheese. Stir until the cheese is melted.

Stuff each of the shells with the meat mixture. Place them into a 9×13 baking pan sprayed with cooking spray.

Pour the remaining salsa and cheese over the noodles. Cover the pan and bake for 15 minutes or until the cheese is melted.

Didn’t see when to add taco seasoning and water. I did that when beef was browned.
