I’ve finally found a way to truly enjoy asparagus! This Asparagus Soup is delicious!!

The only other way I like asparagus is wrapped in bacon but this soup recipe is a healthier way for me to enjoy it.
I made this in the Instant Pot but if you don’t have one I’m including directions for the stovetop as well.

Would you believe this is only 2 points per serving for blue, green and purple!? Each serving is about 2 cups.
You can garnish this with chives, chopped bacon and/or cream. Just make sure you add additional points if necessary.
I had this soup with a half sandwich and it was a filling, low point meal!
This asparagus soup is also perfect for meal prep. It reheats great!

To make this asparagus soup I melted butter in the Instant Pot and cooked the onion for 3 minutes. Then I added the garlic and let that cook for 1 minute.
I cut the rough ends off of the asparagus then cut it into 2 inch pieces. I then added the asparagus and chicken broth to the Instant Pot. I selected the “manual” setting for 10 minutes, then released the pressure right away.
To get the soup nice and smooth I used a hand blender. It’s perfect for soups and even guacamole.
Once the soup was nice and smooth I added the fat-free half and half and seasoned with salt and pepper.

Yield: 4 servings (2 points per serving for blue, green and purple. Each serving is approximately 2 cups.)
- 2 lbs. asparagus, remove tough ends then cut into 2 inch pieces
- 2 cups fat-free chicken broth
- 1 tablespoon butter
- 1 small onion, chopped
- 1 clove garlic, minced
- 1/2 cup fat-free half and half
- Salt and pepper, to taste

Turn Instant Pot to saute and melt butter. Add the onion and cook for 3 minutes while stirring. Add the minced garlic and cook 1 more minute.

Turn the Instant Pot off then add asparagus and chicken broth. Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 10 minutes.

When the time is up release the pressure and remove the lid once the pin falls.

Use a hand blender to puree the soup. Add the fat-free half and half, salt and pepper (to taste). Enjoy!

Melt the butter in a large pot then cook onion for 3 minutes. Add the minced garlic and cook 1 minute.

Add the asparagus and chicken broth. Bring to a simmer and cook for 20 minutes.

Use a hand blender to puree the soup. Add the fat-free half and half, salt and pepper (to taste). Enjoy!
