These spring rolls are a perfect light lunch! They’re like a tasty salad wrapped in rice paper with a side of dressing.

Rice paper is only 1 point per sheet. There are so many things you can do with it! You can pretty much stuff it with any ingredients you like.

I had a hard time finding rice paper at the grocery store so I ended up ordering it on Amazon. You can go here to find the rice paper I bought.
It’s really easy to work with. You put one sheet of rice paper in warm water for 5 seconds. That makes it soft and easy to wrap up.
You put your ingredients into the center of the rice paper, fold up the bottom, fold in the sides then roll it up. That’s it!
For my spring rolls I filled them with spinach, strawberries and reduced-fat feta cheese. You can add as much spinach and strawberries as you want since they are both 0 points.
The feta cheese I only used 1/2 tablespoon for each spring roll to keep it low in points.
I threw together the poppy seed dressing in about 2 minutes. I used light mayonnaise, white vinegar, poppy seeds, sugar, salt and dry mustard. It’s really easy to make and hits the spot with these spring rolls.
This recipe is also perfect for using my strawberry slicer. It seems like such a silly tool but I can slice up a pint of strawberries in just a couple of minutes with it. My kids love strawberries so I use it quite often.

Yield: 8 Spring Rolls (2 spring rolls with 2 tablespoons dressing is 4 points for blue, green and purple)
- 8 rice paper wraps
- 4 tablespoons reduced-fat feta cheese
- Strawberries, sliced
- Baby spinach
- 1/4 cup light mayonnaise
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- 1 teaspoon poppy seeds
- 1/4 teaspoon salt
- 1/4 teaspoon dry mustard

Fill a shallow bowl with warm water. Submerge 1 sheet of rice paper in warm water for 5 seconds. Remove the rice paper from water and lay flat.

Fill the center of the rice paper with spinach, strawberries and 1/2 tablespoon of feta cheese. Fold up the bottom of the rice paper, then fold in the sides and roll it up. Repeat with the rest of the ingredients.

Add the light mayonnaise, white vinegar, poppy seeds, sugar, salt and dry mustard to a small bowl. Stir together and serve or store in the refrigerator for later use.
