Bubble Up Taco Bake

This Bubble Up Taco Bake is an easy weeknight meal and it’s low in points!

I calculated the recipe at 6 servings. It’s 4 points per serving for blue and purple, 5 points per serving for green.

The bubble up taco bake was cooked in a casserole dish (above). Six servings in that casserole dish is a nice size serving!

That leaves plenty of wiggle room if you want to add extras like sour cream and avocado. I added some lettuce, fat free sour cream and tomatoes.

My younger daughter doesn’t like tacos. Crazy, right? She doesn’t understand why other people like tacos so much.

However, she loved this taco bake!

There were just a few things I did to lighten up this dish. Instead of using ground beef I used ground turkey.

I’m not a huge fan of turkey burgers, I prefer a beef burger for sure. But when I use ground turkey in recipes like this I love it. I find that when it’s in a sauce it really tastes like ground beef. Plus the texture is very similar.

I also used tomato sauce in this recipe. I love that it’s 0 points. I mixed it with the turkey and taco seasoning…delicious!

Finally, I used reduced-fat Mexican cheese to help lighten it up.

Yield: 6 servings (4 points per serving for blue and purple, 5 points per serving for green)

Ingredients
  • 1 lb. 99% fat-free ground turkey
  • 1 can tomato sauce (14 1/2 oz.)
  • 1 tablespoon taco seasoning
  • 5 pre-made biscuits (5 oz.)
  • 1/2 cup reduced-fat Mexican cheese, shredded
Instructions
  1. Preheat oven to 350 degrees F.

  2. Brown the ground beef in a frying pan. Add the taco seasoning and stir until combined.

  3. Add the tomato sauce and cook on low.

  4. Cut each biscuit into 8 pieces, then add to the turkey mixture. Turn off the heat and add it to a casserole dish (sprayed with no-stick cooking spray).

  5. Sprinkle the Mexican cheese on top. Bake for 30 minutes. Enjoy!
