Cleanup will be a breeze with this One Pan Cheesy Chicken Broccoli and Rice!
I love cooking, but I hate cleaning up. That’s why I love easy recipes like this.
I calculated this recipe as four servings. They are large servings, roughly 2 cups each.
Per serving it is 5 points for blue and purple, 7 points for green. I think that’s a pretty low point dinner!

Another thing I like about this one pan dinner is you only need a few ingredients:
- Long grain white rice
- 2 chicken breasts
- Broccoli
- Chicken broth
- Reduced fat Mexican cheese, shredded
- Garlic
- Onion
- Salt and pepper
A lot of those ingredients are ones I usually have on hand. That’s how I came up with this recipe.
This one pan meal is also filling. Between the broccoli, chicken and rice…it’s the perfect balance of vegetables, protein and carbs!

To make this recipe you need to use a pan with a lid. I started by chopping up my onion and adding that to the pan with some minced garlic.
I cut the chicken into bite size pieces and added that to the pan. I seasoned it with salt and pepper and let that cook until it was just slightly pink in the center.
Next I added 3 cups of chicken broth to the pan and 1 cup of long grain white rice. I brought it to a slight simmer and put the lid on it.
I let the rice cook for 15 minutes, but I did stir it occasionally.
While that was cooking I needed to get my broccoli ready. Have you ever steamed broccoli in the microwave? It’s really easy and you don’t have to dirty another pot!
You simply chop up your broccoli and at it to a microwave safe bowl. Pour 2-3 tablespoons of water in the bowl, then cove it up. I use a plate to cover the bowl.
Then I microwave it for 2 1/2 minutes. I like my broccoli to be crispy so if you like it cooked more you can leave it in a little longer.
If you don’t want to use fresh broccoli you can buy it frozen and steam it in the bag.
Once the rice is done cooking most of the chicken broth will be absorbed. Add the shredded Mexican cheese to the pan and stir until it is melted.
Finally, add the broccoli to the pan. At this point I try a little bite and season it with salt and pepper if necessary.
That’s all there is to this one pan cheesy chicken broccoli and rice!

- 1 small onion, chopped
- 1 clove of garlic, minced
- 2 boneless, skinless chicken breasts cut into bite size pieces
- 3 cups fat-free chicken broth
- 1 cup long grain white rice
- 2 cups steamed broccoli, chopped
- 1 cup reduced-fat Mexican cheese, shredded
- Salt and pepper, to taste

Spray frying pan with 0 point olive oil spray and add onions and garlic. Let cook for one minute.

Add the chicken breast to the pan and season with salt and pepper. Cook until the chicken is just slightly pink in the center.

Add chicken broth to the pan, then stir in the rice. Bring to a simmer and place lid on the pan. Cook 15 minutes, stirring occasionally.

Add the cheese to the pan and stir until it melts, then add the broccoli. Add salt and pepper if needed.
