One Pan Cheesy Chicken Broccoli and Rice

Ingredients

  • 1 small onion, chopped
  • 1 clove of garlic, minced
  • 2 boneless, skinless chicken breasts cut into bite size pieces
  • 3 cups fat-free chicken broth
  • 1 cup long grain white rice
  • 2 cups steamed broccoli, chopped
  • 1 cup reduced-fat Mexican cheese, shredded
  • Salt and pepper, to taste

Instructions

  • Spray frying pan with 0 point olive oil spray and add onions and garlic. Let cook for one minute.
  • Add the chicken breast to the pan and season with salt and pepper. Cook until the chicken is just slightly pink in the center.
  • Add chicken broth to the pan, then stir in the rice. Bring to a simmer and place lid on the pan. Cook 15 minutes, stirring occasionally.
  • Add the cheese to the pan and stir until it melts, then add the broccoli. Add salt and pepper if needed.
