Pumpkin Spice Cupcakes

These pumpkin spice cupcakes are SO GOOD, it’s hard to believe they are only 2 points each!

You might be wondering how that is even possible? I’ll tell you what I used.

For the cake mix I used Pillsbury sugar-free yellow cake mix. It’s 38 points for the entire box and this recipe makes 24 cupcakes.

I like that Weight Watchers updated the app for the cake mix. It now calculates the points for the whole box, whereas before it said 1/10 of the box.

Some people didn’t realize that and thought there was way fewer points in the cake mix.

So besides the cake mix I also used canned pumpkin, water, pumpkin pie spice and cinnamon.

I put all of the ingredients in a large mixing bowl, then used a handheld mixer on medium speed for two minutes.

There is enough cake mix for 24 cupcakes.

I thought the best topping for these pumpkin spice cupcakes would be whipped cream, of course. Using fat-free Reddi Wip doesn’t add points, as long as it’s not more than 4 tablespoons.

One bonus about these cupcakes is they smell so good when they’re baking! It smells just like you’re baking a pumpkin pie.

If you are not eating the cupcakes right away I would wait to add the whipped cream.

Yield: 24 cupcakes (2 points each on myWW blue, green and purple)

Ingredients
  • 1 box Pillsbury sugar-free yellow cake mix
  • 1 15 oz. can pure pumpkin
  • 1/2 cup water
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
Optional:
  • Fat-free Reddi Wip
Instructions
  1. Preheat oven to 325 degrees F.

  2. Add the cake mix, pumpkin, water, pumpkin pie spice and cinnamon to a mixing bowl. Combine using a handheld mixer on medium for two minutes.

  3. Line a cupcake pan with cupcake wrappers. Fill each one half full with the cake batter. Bake for 20 minutes, or until a toothpick inserted in the middle comes out clean.

  4. Let cupcakes cool, then add fat-free Reddi Wip.

    The box of mix says to add 3 eggs. Is there a reason you chose not to add the eggs? On blue eggs are 0 points.

    Also wondering why no eggs? I made these today and seemed very dense. Although delicious. Would eggs maybe make them fluffier?
