Pumpkin Spice Cupcakes

Yield: 24 cupcakes (2 points each on myWW blue, green and purple)

Ingredients

  • 1 box Pillsbury sugar-free yellow cake mix
  • 1 15 oz. can pure pumpkin
  • 1/2 cup water
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon

Optional:

  • Fat-free Reddi Wip

Instructions

  • Preheat oven to 325 degrees F.
  • Add the cake mix, pumpkin, water, pumpkin pie spice and cinnamon to a mixing bowl. Combine using a handheld mixer on medium for two minutes.
  • Line a cupcake pan with cupcake wrappers. Fill each one half full with the cake batter. Bake for 20 minutes, or until a toothpick inserted in the middle comes out clean.
  • Let cupcakes cool, then add fat-free Reddi Wip.
