I don’t make pork chop recipes very often, but this one was really good so I had to share it!

This pork chop casserole is only 5 Freestyle points per serving….and it has potatoes!!
This is a perfect meal for a Sunday family dinner. They won’t even guess it is WW friendly.
I used a pound of thin, boneless pork chops. There were 6 of them. I started by seasoning the pork chops with garlic powder, onion powder, parsley, salt and pepper.
Next, I seared the pork chops for about 2 minutes on each side. Instead of using oil I used Pam no-stick superior cooking spray. That saved a lot of points!

While the pork was cooking I added the Healthy Request Cream of Chicken and skim milk to a mixing bowl.
Once the pork was seared I added it to a baking pan that was sprayed with no-stick cooking spray.

Now for the potatoes. I used a mandoline to thinly slice the potatoes. I wanted 5 oz. of potatoes so I used my food scale.
I added the potatoes on top of the pork chops, then seasoned them with salt and pepper.

5 ounces gives you quite a few potatoes!
The last step was to add the cream of chicken mixture. I evenly poured it on top, then I covered the pan.
Then it was off to the oven for 40 minutes.
I topped it off with some fresh chives. It was really good!
The potatoes reminded me of those Au Gratin potatoes in a box….which I used to love, but haven’t had in years. Which also made me think this dish would be good with a little bit of cheese on top. Maybe next time!

Yield: 6 servings (5 myWW points per serving for blue and green, 4 points for purple)
- 1 lb. boneless, thin pork chops
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon parsley
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 5 oz. baking potato, thinly sliced
- salt and pepper, to taste
- 1 can Healthy Request Cream of Chicken condensed soup
- 1/2 cup skim milk
- Chopped fresh chives

Preheat oven to 350 degrees F.

Preheat a large frying pan on medium-high heat.

In a small bowl add the garlic powder, onion powder, parsley, salt and pepper. Mix together then add to both sides of the pork chops.

Spray the frying pan with no-stick cooking spray. Add the pork chops and sear for 2 minutes on each side.

Peal the potato. Use a mandoline to thinly slice the potato until you have 5 oz.

Add the Healthy Request Cream of Chicken condensed soup and skim milk together in a mixing bowl. Stir together.

Spray an 8×10 baking dish with no-stick cooking spray. Add the pork chops.

Add the potato slices on top of the pork chops. Sprinkle the potatoes with salt and pepper.

Pour the cream of chicken mixture over the potatoes. Cover the dish and bake for 40 minutes.

Cut the fresh chives and sprinkle on top. Enjoy!
