Chicken Caesar Wrap

This Chicken Caesar Wrap is low in points and super easy to make!

It’s also a great recipe for meal prep. The chicken tastes just as good (if not better) for leftovers.

The Ingredients

Chicken Breast: Chicken breast is an excellent source of lean protein, which helps keep you feeling full and satisfied. Protein is also important for maintaining and repairing muscles. Because boneless, skinless chicken breast is relatively low in fat, it’s a great choice for a lighter meal.

Chicken Broth: Chicken broth adds moisture and flavor to the chicken without adding much fat or calories. Using a low-sodium or reduced-sodium broth can also help keep the overall sodium content of the recipe lower.

Garlic: Garlic adds lots of flavor without adding many calories. It contains sulfur-containing compounds such as allicin, which are associated with antioxidant and anti-inflammatory properties. It’s an easy way to boost flavor without relying on additional fat or sugar.

Lite Creamy Caesar Dressing: Using a lite Caesar dressing instead of regular Caesar dressing helps reduce the amount of calories and fat in the wrap while still giving you that creamy Caesar flavor. Since dressing can be calorie-dense, using a lighter version is a simple way to make the recipe more calorie-conscious.

Ole Xtreme High Fiber Tortillas: The high-fiber tortilla is one of the ingredients that makes this wrap especially filling. Fiber helps support digestive health and can help you feel full longer. Choosing a high-fiber tortilla also gives you more nutritional value than a traditional low-fiber flour tortilla.

Romaine Lettuce: Romaine adds volume, crunch and freshness for very few calories. It’s also a source of vitamin A, vitamin K, folate and other nutrients. Adding lettuce is an easy way to increase the vegetable content of the meal.

How to Make Chicken Caesar Wraps

I started by putting one pound of boneless, skinless chicken breasts in the Instant Pot, added a half cup of chicken broth and one clove of garlic, minced. I set it for 15 minutes on high pressure and waited patiently.

Once the timer went off I let the pressure release naturally for 5 minutes, then finish with a quick release.

I pulled the chicken out and shredded it, then added it to a bowl. I added 1/4 cup of the chicken broth liquid and also 1/2 cup lite creamy Caesar dressing and mixed it all together.

I divided the chicken into four servings, which was 3 WW Freestyle points (Weight Watchers) per serving.

I made my wrap using a Ole Xtreme high fiber tortilla. I love them because they taste good and it’s only 1 point for a whole tortilla.

To make my wrap I put some lettuce on the tortilla:

Next I added my Caesar chicken:

Then I added a little salt and pepper and rolled it up. That’s it!

My Chicken Caesar Wrap was only 4 points. I had it with some carrots and celery. It was a filling and yummy lunch.

Chicken Caesar Wrap

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1/2 cup fat-free chicken broth
  • 1 clove garlic, minced
  • 1/2 cup lite creamy Caesar dressing
  • 4 Ole Xtreme high fiber tortillas
  • Romaine lettuce
  • Salt and pepper, to taste

Instructions

  • Place the chicken breasts, chicken broth and garlic in the Instant Pot.
  • Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 15 minutes.
  • Once the timer goes off let it naturally release for 5 minutes, then finish with a quick release.
  • Remove the chicken from the Instant Pot and shred it, then place it into a mixing bowl. Add 1/4 cup of the chicken broth from the Instant Pot, also add the Caesar dressing and mix well.
  • Lay out a tortilla and add some lettuce, then chicken mixture. Add salt and pepper, if desired. Last, roll up the tortilla. Enjoy!

For the slow cooker:

  • Place the chicken breasts, chicken broth and garlic in the slow cooker.
  • Cook on low for 6 hours.
  • Remove the chicken from the slow cooker and shred it, then place it into a mixing bowl. Add 1/4 cup of the chicken broth from the slow cooker, also add the Caesar dressing and mix well.
  • Lay out a tortilla and add some lettuce, then chicken mixture. Add salt and pepper, if desired. Last, roll up the tortilla. Enjoy!
