This burrito bowl is ZERO Freestyle points!
The star of this burrito bowl is the cauliflower rice. Never in my life did I think I would say that, but it’s true!

I used frozen cauliflower rice, straight from the freezer. To make it taste delicious I sautéed some fresh minced garlic then added the cauliflower rice. It added so much great flavor to the cauliflower.
I used to buy the minced garlic in the jar, but I made the switch to only using fresh garlic. It has been a huge gamechanger!
I was intimidated by the thought of using fresh garlic, but now I’m obsessed with it. It’s so easy to work with!
I bought a garlic press that I love. What makes it extra fabulous is you don’t have to peel the garlic. This is the one I use:
To sauté the garlic I used Pam Superior Oil Spray. I like it because it is pure olive oil. You can use up to 8 sprays for 0 points.
I heated my pan on low/medium, then used about four sprays of the oil. Next I added the minced garlic. You want to make sure the pan is not too hot. Burned garlic is not good!
I added the riced cauliflower and let it cook for 5 minutes. I squeezed 1/2 of a lime into it and added some salt and cilantro. It was so good!!!
I used cumin, garlic powder and salt to season the chicken breast. I cooked that for four minutes on each side.
Once my chicken was done cooking I added the red pepper to the pan and cooked it for 3 minutes. I like my peppers to still be crispy. I cooked it in the same pan as my chicken so that it got some of the flavor from the seasoned chicken.
I also added some red onion and black beans to my burrito bowl. I used all zero point ingredients!
I served it with a side of fat free salsa. It was a delicious zero point meal!


Yield: 2 Burrito Bowls – 0 points for blue and purple, 5 points per bowl for green
- 1 10 oz. bag of frozen cauliflower rice
- 1 clove of garlic, minced
- 1/2 Lime, juiced
- 1/2 cup cilantro, chopped
- 2 boneless, skinless chicken breasts
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt, divided
- 1/2 red pepper, sliced
- 1/2 cup black beans
- 1/2 small red onion, chopped

Preheat a pan on low/medium. Spray with no-stick cooking spray and add the minced garlic.

Cook for 1 minute, then add the riced cauliflower. Cook for 5 minutes.

Remove from heat and add the lime juice, 1/4 teaspoon salt and cilantro. Mix together.

Add the cumin, garlic powder and 1/4 teaspoon salt to a small bowl. Stir together and use it to season the chicken breasts.

Cook the chicken in a no-stick frying pan over medium heat for four minutes on each side, or until cooked all the way through.

Remove chicken from the pan and add the red peppers. Cook for 3 minutes.

Assemble two bowls by adding the cauliflower rice, chicken, red peppers, black beans, and red onions.
