Roasted Tomatoes & Garlic Pasta – Weight Watchers

I went to Dave and Busters over the weekend with some friends. I wanted to grab a bite to eat and play some games.

We didn’t have the kids with us, we just wanted to have some adult fun.

The first time I went I was very surprised how much food was at Dave and Busters.

Not just food, but good food! And their menus tell you how many calories are in the meal. I love when restaurants do that.

Something can look pretty healthy, but then you check the calories and find out otherwise. This past Sunday I saw a pasta dish that looked delicious. When I checked the calories I decided to pass.

I had that pasta on my mind for a couple of days. Then I decided I would just make my own! I made a delicious healthy version of it.

That’s how I came up with this Roasted Tomatoes & Garlic Pasta. I knew I wanted to do something with roasted tomatoes, garlic, fresh basil and Parmesan cheese.

My version is only 5 Freestyle points per serving. I liked it so much I had it for lunch and dinner. Even though you roast the tomatoes and garlic the recipe doesn’t take very long to make.

I started out by adding a teaspoon of olive oil to my cherry tomatoes and garlic. I put them on a baking sheet and popped them in the oven for 10 minutes. I set the oven to 450, so it didn’t take long for the tomatoes to start getting wrinkly and juicy.

While the tomatoes were in the oven I cooked my pasta. I used angel hair pasta, which I like because it only takes about 4 minutes to make.

Next up I added a teaspoon of olive oil to my cast iron skillet with some more garlic. I let that cook a minute, then I added some chicken broth and the roasted tomatoes. You want to make sure you add all of the juice from the tomatoes too.

I added the pasta to the cast iron skillet and mixed everything together. Then I added the fresh basil and shredded Parmesan cheese.

It’s super easy and delicious!

Ingredients
  • 4 oz. angel hair pasta (uncooked)
  • 10 oz. cherry tomatoes
  • 4 cloves of garlic, minced, divided
  • 2 teaspoon extra virgin olive oil, divided
  • 1/2 cup chicken broth
  • 1/3 cup fresh basil, chopped
  • 1/4 cup Parmesan cheese, shredded
  • salt and pepper, to taste
Instructions
  1. Preheat oven to 450 degrees F.

  2. In a small bowl combine the cherry tomatoes, 2 cloves of garlic (minced) and 1 teaspoon extra virgin olive oil. Mix together, then add them to a baking sheet sprayed with no-stick cooking spray. Add salt and pepper and bake for 10 minutes. 

  3. While the tomatoes are in the oven, cook and drain the pasta according to the directions on the box. 

  4. Add 1 teaspoon extra virgin olive oil to a heated pan. Add 2 cloves of minced garlic and cook for 1 minute. 

  5. Add the chicken broth and roasted tomatoes (including any juice from the tomatoes) to the pan. Next add the pasta and mix it all together. 

  6. Add the chopped basil and Parmesan cheese. Add additional salt (if desired). Mix together and serve.
