Turkey Hummus Roll Ups – Weight Watchers

It has been in the 90’s lately. With it being so hot the last thing I want is a hot meal. I’m looking for cool dishes to cool me off.

These Turkey Hummus Roll Ups are perfect. They’re cold, filling, low in points and taste good! Two of the roll ups are 3 Freestyle points.

You can stuff them with all kinds of 0 point veggies. I used cucumber, carrots and red pepper. It was colorful and tasty!

I cut the veggies into long, thin strips. That made it easy to roll up. The turkey I used was 6 slices for 1 Freestyle point. I used 3 slices for each roll up.

I used 1 tablespoon of hummus for each roll up. I spread it on the bottom piece of turkey and the second piece.

Next it was time to add the veggies. I added two pieces of each vegetable. I left about 1 inch at the bottom to make it easy to roll.

Then it was time to roll them up. I started at the bottom, wrapping the turkey over the veggies, then I rolled it the rest of the way.

I’ve also made these with just red, yellow and green peppers. Really any veggie combination will work. It’s all about what you like.

One tablespoon of hummus may not sound like a lot, but it really is. If you want to reduce the points you could use a 1/2 tablespoon. That would make it 2 Freestyle points for 2 roll ups.

You will want to check the point value of the turkey you use. That could change the overall point total.

Ingredients: 

  • Turkey lunch meat
  • 2 tablespoons hummus
  • Thin sliced veggies. I used red pepper, cucumber and carrots

Directions:

  1. Lay your turkey flat.
  2. Add 1 tablespoon of hummus.
  3. Add some of the vegetables 1 inch from the bottom of the turkey.
  4. Roll up the turkey starting from the bottom.
