Apple Pie Cheesecake Cups Are a Delicious No-Bake Dessert
These Apple Pie Cheesecake Cups are an easy, lighter dessert that have all the flavors of apple pie and cheesecake in a convenient individual dessert.
The cheesecake layer is made with fat-free Greek yogurt and zero-sugar cheesecake pudding mix, so there’s no cream cheese needed. The pudding mix gives the yogurt a thick, creamy texture and plenty of cheesecake flavor.
These are perfect for fall when apples are at their best. Since they’re made in individual cups, they’re also great for portion control, meal prep, parties, or when you want a sweet treat without making an entire cheesecake.

The Ingredients
Apple: The Apple provides fiber and natural sweetness while adding plenty of classic apple-pie flavor. Leaving the apples in small pieces gives you a nice texture throughout the dessert.
Fat-Free Greek Yogurt: Greek yogurt is a convenient source of protein and calcium. Using fat-free Greek yogurt keeps the cheesecake layer light while still giving it a creamy texture.
Zero-Sugar Cheesecake Pudding Mix: A small amount of cheesecake pudding mix gives the Greek yogurt a thicker consistency and cheesecake flavor without needing cream cheese.
Graham Crackers: Graham crackers provide the familiar buttery, slightly sweet crust that makes these taste like a traditional cheesecake.
Light Butter: A small amount of light butter helps bind the graham cracker crumbs together and adds richness to the apple filling.
Cinnamon: Cinnamon adds plenty of warm flavor to the apples without adding significant calories or sugar.
Cornstarch: Cornstarch helps thicken the apple mixture so it becomes more like a spoonable apple pie filling.

How to Make Apple Pie Cheesecake Cups
Add the diced apples, light butter, brown sugar substitute, and cinnamon to a small skillet over medium heat.
Cook for about 5–7 minutes, stirring occasionally, until the apples begin to soften.
In a small bowl, whisk together the cornstarch and water. Pour the mixture into the skillet and stir. Cook for another 1–2 minutes, until the apple mixture thickens.
Remove from the heat and stir in the vanilla extract. Set aside to cool.
Add the fat-free Greek yogurt, cheesecake pudding mix and vanilla extract to a bowl. Whisk until smooth and creamy. Let it sit for a couple of minutes to thicken.
Combine the crushed graham crackers, melted light butter, and brown sugar substitute.
Divide the graham cracker mixture evenly between 4 small dessert cups or jars. Use approximately 1½ tablespoons per cup and gently press the crumbs down.
Spoon the cheesecake yogurt mixture evenly over the graham cracker crust.
Divide the cooled apple pie filling between the cups and spoon it over the cheesecake layer.
Refrigerate for at least 1 hour before serving.

Can I make Apple Pie Cheesecake Cups ahead of time?
Yes. These are a great make-ahead dessert. Assemble the cups, cover them and refrigerate until you’re ready to serve. For the best texture, I’d recommend enjoying them within 2–3 days.
What kind of apples should I use?
You can use almost any apple you enjoy. Honeycrisp, Gala, Fuji and Granny Smith all work well. Granny Smith will give you a more tart apple-pie flavor, while sweeter apples will make the dessert taste sweeter overall.
Can I freeze Apple Pie Cheesecake Cups?
I wouldn’t recommend freezing them. The Greek yogurt layer can change texture after freezing and thawing, and the apple mixture may become watery. Refrigerating them gives you the best texture.
