This is a light, satisfying lunch recipe packed with flavor! It’s low carb and Weight Watchers friendly.
What makes this recipe so good is the combination of Mediterranean-inspired ingredients. Cucumber, feta, dill, and red onion add plenty of texture and flavor, allowing you to keep the dressing light while still creating a delicious and filling meal.
Whether you enjoy it with crackers, in a lettuce wrap, or on low carb bread, this healthy chicken salad is perfect for meal prep, quick lunches, and easy dinners.

The Ingredients
Chicken Breast: Chicken breast is an excellent source of lean protein, which helps keep you feeling full and satisfied longer. Protein also supports muscle maintenance and recovery while helping reduce cravings between meals.
Using skinless chicken breast keeps the recipe lower in saturated fat while providing plenty of nutrition.
Cucumber: Cucumbers add refreshing crunch and volume with very few calories. They are naturally hydrating because they contain a high percentage of water, making them a great ingredient for weight management.
They also provide small amounts of vitamins K and C along with antioxidants that support overall health.
Reduced-Fat Feta Cheese: Feta cheese delivers bold, tangy flavor, which means a little goes a long way. Compared to many other cheeses, feta is lower in calories and fat while still providing calcium and protein.
Its strong flavor helps create a satisfying dish without requiring large amounts.
Red Onion: Red onion adds crunch, color, and a mild bite that balances the creamy dressing. Onions contain antioxidants and plant compounds that may help support heart health.
They also add flavor naturally, reducing the need for extra calories from sauces or seasonings.
Fat-Free Greek Yogurt: Greek yogurt is one of the healthiest swaps you can make in chicken salad. It provides a creamy texture similar to mayonnaise but contains significantly more protein and less fat.
It also provides calcium and other beneficial nutrients while helping to create a rich, satisfying dressing.
Light Mayonnaise: A small amount of light mayonnaise enhances the classic chicken salad flavor while keeping calories and fat lower than traditional versions.
Combining it with Greek yogurt creates a balanced dressing that tastes indulgent without being heavy.
Dill & Garlic Powder: These add a lot of flavor without extra calories or fat.
