How to Make High Protein Turkey Sausage & Spinach Quesadillas
Heat a nonstick skillet over medium heat and lightly coat it with cooking spray.
Add the turkey sausage crumbles and cook for 2-3 minutes until heated through.
Stir in the chopped spinach and cook for about 1 minute, just until wilted. Add the beaten eggs and gently scramble until set.
Remove everything from the skillet.
Place the tortilla back into the skillet. Sprinkle the cheese on one half of the tortilla.
Add the egg, sausage, and spinach mixture, then fold the tortilla in half.
Cook for 2-3 minutes per side until golden brown and crispy.
Slice into wedges and serve with salsa or your favorite hot sauce.

- 1/4 cup Jimmy Dean fully cooked turkey sausage crumbles
- 2 large eggs
