High Protein Turkey Sausage & Spinach Quesadilla

Ingredients

  • 1 Mission Carb Balance flour tortilla
  • 1/4 cup Jimmy Dean fully cooked turkey sausage crumbles
  • 2 large eggs
  • 1 tablespoon reduced-fat Mexican cheese, shredded

Instructions

  • Heat a nonstick skillet over medium heat and lightly coat it with cooking spray.
  • Add the turkey sausage crumbles and cook for 2-3 minutes until heated through.
  • Stir in the chopped spinach and cook for about 1 minute, just until wilted. Add the beaten eggs and gently scramble until set.
  • Remove everything from the skillet.
  • Place the tortilla back into the skillet. Sprinkle the cheese on one half of the tortilla.
  • Add the egg, sausage, and spinach mixture, then fold the tortilla in half.
  • Cook for 2-3 minutes per side until golden brown and crispy.
  • Slice into wedges and serve with salsa or your favorite hot sauce.
