The Ingredients

How to Make Bruschetta Pasta

Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and reserve ¼ cup of pasta water.

While the pasta cooks, heat olive oil in a large skillet over medium heat.

Add garlic and cook for 30 seconds until fragrant.

Stir in tomatoes, Italian seasoning, salt, and pepper. Cook 4–5 minutes until tomatoes begin to soften. Use the back of a spoon or spatula to gently smash the tomatoes to create a light sauce.

Stir in balsamic vinegar and reserved pasta water.

Add cooked pasta and toss well.

Remove from heat and stir in basil and mozzarella.

Serving Suggestions

Serve with a crisp side salad topped with cucumber, red onion, and light balsamic vinaigrette for a fresh, balanced meal.

Pair with roasted broccoli or asparagus for an easy veggie side that complements the garlic and tomato flavors.

Ingredients

  • 8 ounces uncooked linguine
  • 2 teaspoons olive oil
  • 2 cups cherry tomatoes
  • 3 cloves garlic
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup fresh basil, chopped
  • 3 oz. fresh mozzarella, cut into small pieces
