Light & Easy Bruschetta Pasta Recipe

Ingredients

  • 8 ounces uncooked linguine
  • 2 teaspoons olive oil
  • 2 cups cherry tomatoes
  • 3 cloves garlic
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup fresh basil, chopped
  • 3 oz. fresh mozzarella, cut into small pieces

Instructions

  • Cook pasta according to package directions. Drain and reserve ΒΌ cup of pasta water.
  • Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds.
  • Add tomatoes, Italian seasoning, salt, and pepper. Cook until tomatoes begin to soften. Use the back of a spoon or spatula to gently smash the tomatoes to create a light sauce.
  • Stir in balsamic vinegar and reserved pasta water.
  • Add cooked pasta and toss well.
  • Remove from heat and stir in basil and mozzarella.
