Ingredients
8ouncesuncooked linguine
2teaspoonsolive oil
2cupscherry tomatoes
3 clovesgarlic
1tablespoonbalsamic vinegar
1teaspoonItalian seasoning
Salt and pepper, to taste
1/4cupfresh basil, chopped
3oz.fresh mozzarella, cut into small pieces
Instructions
Cook pasta according to package directions. Drain and reserve ΒΌ cup of pasta water.
Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds.
Add tomatoes, Italian seasoning, salt, and pepper. Cook until tomatoes begin to soften. Use the back of a spoon or spatula to gently smash the tomatoes to create a light sauce.
Stir in balsamic vinegar and reserved pasta water.
Add cooked pasta and toss well.
Remove from heat and stir in basil and mozzarella.
