Instant Pot Beer Braised Roast (Low Carb and Weight Watchers Friendly)
There’s nothing better than a cozy, comforting dinner that basically cooks itself. This Instant Pot Beer-Braised French Dip is rich, savory, and packed with tender shredded beef that melts in your mouth.
It tastes like something you’d order at a restaurant, but it’s incredibly easy to make at home. Using simple ingredients like onion, garlic, and au jus seasoning, this roast develops deep flavor in a fraction of the time thanks to the Instant Pot.
The beer adds richness without making the dish heavy, creating a bold, savory broth that’s perfect for dipping.

If you’re looking for a satisfying comfort meal that still fits a low carb or Weight Watchers diet, this recipe delivers big flavor while keeping things simple and balanced.
The Ingredients
Lean Chuck Roast: Beef is a high-quality protein source that helps keep you full and satisfied. Protein supports muscle maintenance and helps prevent overeating later in the day.
Choosing a leaner cut keeps saturated fat lower while still delivering rich flavor.
Garlic: Garlic is known for its immune-supporting properties and adds bold flavor without extra calories. A little goes a long way in boosting taste naturally.
Onion: Onions add natural sweetness and depth without added sugar.
Beer: I used Michelob Ultra because it’s low in carbs. While beer does contain carbs, most of the alcohol cooks off during pressure cooking.
It enhances flavor, so you don’t need heavy sauces or added fats to make the dish taste rich.
Au Jus Mix: Using a seasoning packet keeps the ingredient list simple and portion-controlled.
It delivers concentrated flavor, reducing the need for butter or high-calorie gravies.
Onion & Garlic Powder: These boost savory flavor without adding calories, carbs, or fat, helping you create a deeply seasoned dish while staying on track.

How to Make This Instant Pot Beer Braised Roast
Trim the roast of any fat. Season with garlic powder, onion powder, salt, and pepper. Optional: Sear both sides for 2-3 minutes (this adds flavor).
Add the sliced onion and minced garlic to the Instant Pot. Pour in the beer and add the roast.
Sprinkle in the au jus packet and stir.
Seal and cook on high for 60 minutes. Let the pressure naturally release for 15 minutes, then quick release the remaining pressure.
Shred the beef and return it to the juices before serving.
To make it in the slow cooker, prepare the same way. Cook on low for 8-9 hours or high for 4-5 hours.
Why This Works for Low Carb and Weight Watchers
This roast is high in protein, which keeps you fuller longer. It can help prevent snacking and overeating.
There’s no heavy cream or butter, unlike many comfort foods.
It’s naturally low in carbs – the roast itself is carb free. The only carbs come from the beer, onion, and seasoning.
