Instant Pot Beer Braised Roast (Low Carb and Weight Watchers Friendly)

Ingredients

  • 3 lb. chuck roast (trimmed of fat)
  • 12 oz. beer (I used Michelob Ultra since it's low in carbs)
  • 2 cloves garlic, minced
  • 1 yellow onion, sliced
  • Garlic powder, onion powder, salt, and pepper, to taste
  • 1 au jus mix packet

Instructions

  • Trim the roast of any fat. Season with garlic powder, onion powder, salt, and pepper. Optional: Sear both sides for 2-3 minutes (this adds flavor).
  • Add the sliced onion and minced garlic to the Instant Pot. Pour in the beer and add the roast.
  • Sprinkle in the au jus packet and stir.
  • Seal and cook on high for 60 minutes. Let the pressure naturally release for 15 minutes, then do a quick release of the remaining pressure.
  • Shred the beef and return it to the juices before serving.

For the slow cooker:

  • Prepare the roast the same way. Cook on low for 8-9 hours or high for 4-5 hours.
