Instant Pot Beer Braised Roast (Low Carb and Weight Watchers Friendly)

Ingredients
3lb.chuck roast (trimmed of fat)
12oz.beer (I used Michelob Ultra since it's low in carbs)
2clovesgarlic, minced
1yellow onion, sliced
Garlic powder, onion powder, salt, and pepper, to taste
1au jus mix packet
Instructions
Trim the roast of any fat. Season with garlic powder, onion powder, salt, and pepper. Optional: Sear both sides for 2-3 minutes (this adds flavor).
Add the sliced onion and minced garlic to the Instant Pot. Pour in the beer and add the roast.
Sprinkle in the au jus packet and stir.
Seal and cook on high for 60 minutes. Let the pressure naturally release for 15 minutes, then do a quick release of the remaining pressure.
Shred the beef and return it to the juices before serving.
For the slow cooker:
Prepare the roast the same way. Cook on low for 8-9 hours or high for 4-5 hours.
