Chocolate Peanut Butter Ice Cream Sandwich

Chocolate graham crackers filled with delicious peanut butter filling – this will be your go-to sweet treat for summer!

Not only are they Weight Watchers friendly but kids love them too. The only problem is you might not want to share.

The recipe makes quite a few ice cream sandwiches. You can keep your freezer stocked with them during the summer.

The Ingredients

Chocolate Graham Crackers: I had to go to two stores to find them but it was worth it. Kroger usually has them but they were out so I went to Meijer and found them there.

If you can’t find chocolate graham crackers you could use regular ones but I wanted the chocolate/peanut butter combination.

PB2 Powder: You can buy PB2 powder on Amazon or most grocery stores. It’s a great alternative for regular peanut butter.

PB2 powder is lower in fat and calories. I’ve used it for both sweet and savory recipes.

Cool Whip: To keep the recipe lower in points I used fat free Cool Whip. I can’t even tell a difference compared to regular Cool Whip.

How to Make Chocolate Peanut Butter Ice Cream Sandwiches

Whisk together the PB2 powder and the water. It should have the consistency of melted peanut butter. If it’s too thick it won’t mix with the Cool Whip.

Fold the Cool Whip into the PB2 powder and water. Don’t stir aggressively or the Cool Whip will liquefy.

Break each graham cracker sheet into 4 pieces. I found it was easier to cut them ahead of time vs. after they froze.

Add 1-2 tablespoons of the peanut butter filling to one of the graham crackers. I used an icing spatula which made it easy. Top it with another graham cracker.

I added all of the ice cream sandwiches to a baking sheet. Freeze for 2-3 hours.

Freezing them will harden the Cool Whip mixture and slightly soften the graham crackers.

Ingredients

  • 1/2 cup PB2 powder
  • 6 tablespoons water
  • 8 oz. fat free Cool Whip
  • 14 chocolate graham cracker sheets

Instructions

  • Whisk together the PB2 powder and water. It should have the consistency of melted peanut butter.
  • Fold the Cool Whip into the PB2 powder.
  • Break each graham cracker sheet into 4 pieces.
  • Add 1-2 tablespoons of the peanut butter filling to one of the graham crackers. Top it with another graham cracker and place on a baking sheet.
  • When all of the ice cream sandwiches are made place them in the freezer for 2-3 hours. Once frozen add them to an airtight container and keep them in the freezer.
