Lemon Garlic Shrimp with Rice (Ten Dollar Meal)
This is another $10 meal idea!
Not only is it easy on the budget, but it’s also Weight Watchers friendly.

My $10 meal consists of lemon garlic shrimp, rice pilaf, and asparagus. It only costs $8.40 and feeds 4 people.
The Ingredients
Shrimp: I bought a 20 pack of shrimp cocktail for only $4.99. That’s 5 shrimp per person. If you’re not feeding 4 people you can double up on the shrimp.
Since the shrimp is already cooked we’re just going to heat it up. You don’t want to cook the shrimp too long or it will become tough.
Rice-A-Roni Rice Pilaf: This is an easy to make side dish, and it was only $1.
I kept the rice low in points by leaving out the butter. I used a nonstick skillet, sprayed it with cooking spray, then added the rice-pasta mixture. The pasta will still turn golden without using the butter.
Asparagus: This was on sale for $.95 and it was more than enough to feed 4 people.
Garlic: A head of garlic is $.67 and it’s more than enough for multiple recipes. One bulb of garlic has 10-12 cloves on average and we’re only using two for the shrimp.
I like fresh garlic way better than the stuff in the jar. I use this garlic press for minced garlic and you don’t need to peel the garlic. It’s so easy!
Lemon: The lemon helps to add flavor to the shrimp. One lemon was $.67.
The grand total for this meal was only $8.40.

The “pantry staples” I didn’t include for this recipe are salt, crushed pepper flakes (optional), and butter.
If you don’t have butter you can get a tub of Land O Lakes butter for only $2.99.
That would bring the meal total to $11.39. It’s a little over $10, but still an inexpensive meal to feed 4 people.

How to Make Lemon Garlic Shrimp and Rice
The rice pilaf takes the longest to cook, so I started with that.
Heat a nonstick skillet over medium heat and spray with oil or cooking spray.
Add the rice-pasta mixture and cook until the pasta is golden.
Pour in two cups of water and the seasoning packet. Mix it together, cover and cook 17-22 minutes.
For the shrimp, I first peeled the shell off of the tail. You want to make sure the shrimp is thawed, not frozen.
Heat a frying pan over medium heat and melt 1/2 tablespoon of butter. Add the minced garlic and cook for 30 seconds.
Pour in the juice from one lemon, then add the shrimp. Make sure the shrimp is in a single layer.
Let the shrimp cook for 30 seconds, flip it, and cook for 30 seconds.
Since the shrimp is already cooked, you don’t want to overcook it, or it will become tough.
As far as the asparagus, you can prepare it however you like. I sprayed a nonstick pan with oil, added minced garlic, then the asparagus. I seasoned it with salt and pepper and let it cook for 5 minutes, stirring occasionally.

- 20 medium shrimp from shrimp cocktail (thawed, with the shell peeled)
- Juice from one lemon
- 2 cloves garlic, minced
- 1/2 tablespoon butter
- 1 box Rice-A-Roni rice pilaf
- 1 bunch asparagus
- Salt and crushed pepper flakes (optional)
Instructions
- Start with the rice pilaf since it takes the longest to cook. Heat a nonstick skillet over medium and spray with oil or cooking spray.
- Add the rice-pasta mixture and cook until the pasta is golden. Pour in two cups of water and the seasoning packet. Mix it together, cover and cook 17-22 minutes.
- Heat a frying pan over medium heat and melt 1/2 tablespoon of butter. Add the minced garlic and cook for 30 seconds.
- Pour in the lemon juice, then add the shrimp. Make sure the shrimp is in a single layer. Season with salt and crushed pepper flakes.
- Let the shrimp cook for 30 seconds, flip it, and cook for 30 seconds. Since the shrimp is already cooked, you don't want to overcook it, or it will become tough.
- (For the asparagus, I sprayed a nonstick pan with oil, added minced garlic, then the asparagus. I seasoned it with salt and pepper and let it cook for 5 minutes, stirring occasionally.)
