Greek Chicken Bowls

This mouthwatering Greek dish is easy to prepare, customizable, and packed full of nutrients.

I made a homemade tzatziki sauce that’s delicious and easy to prepare.

The Healthy Benefits of the Ingredients:

The cucumbers are in the tzatziki sauce and the Greek bowl. They are a good source of dietary fiber, potassium, and magnesium.

These nutrients help to lower blood pressure, which can reduce the risk of heart disease.

Raw tomatoes are full of vitamin C, which is good for your skin and helps fight inflammation.

Red onions are a great source of antioxidants, so they do more than just add flavor.

Chickpeas are high in fiber and protein. They also contain several key vitamins and minerals.

Feta cheese also offers health benefits. Not only is it packed with protein but also probiotic yeasts that may lower the PH in your stomach, which is great for a healthy gut.

The boneless, skinless chicken breast is low in fat but high in protein, which helps to control your appetite, keep your bones healthy, and build muscle.

How to Make Greek Chicken Bowls:

The first thing I did was prepare the tzatziki sauce. I added the fat-free Greek yogurt to a small mixing bowl.

Next, I shredded 1/3 of the cucumber and added it to the yogurt.

Then I added the garlic powder, dill, lemon juice, salt, and pepper. Mix it together until combined.

I seasoned the chicken breasts with Greek seasoning. If you don’t have any you can use your favorite seasonings.

Cook the chicken breasts for 3-4 minutes on each side (depending on the thickness of your chicken).

Assemble the bowls by adding 1/2 cup rice to each bowl, one chicken breast, chickpeas, tomato, cucumber, feta cheese, red onion, and tzatziki sauce.

Make It Your Own:

The great thing about these Greek Chicken Bowls is they are easily customizable.

If you want it even healthier you can use brown rice instead of white rice.

You can make it even lower in points by replacing the rice with lettuce.

Another great idea is mixing up the vegetables. Just make sure to check that the point value remains the same.

Ingredients
  • 2 cups cooked white rice
  • 1 lb. boneless, skinless chicken breast
  • Greek seasoning
  • 1 cup fat-free Greek yogurt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 English cucumber
  • 1/4 cup chopped red onion
  • 1 tomato
  • 1 cup chickpeas (drained and rinsed)
  • 1/4 cup reduced-fat feta cheese
Instructions
  1. Shred 1/4 of the English cucumber. Add it to a small bowl with the Greek yogurt, garlic powder, dill, lemon juice, salt, and pepper.

  2. Season the chicken breasts with the Greek seasoning. Spray a nonstick pan with cooking spray and cook the chicken breast 3-4 minutes on each side over medium heat, or until it reaches an internal temperature of 165 degrees.

  3. Assemble the bowls by adding the rice, chicken, tomatoes, chickpeas, feta cheese, red onion, cucumbers, and tzatziki sauce.
