This One Pot Orzo Pasta with Tomatoes is the perfect side dish for WW!

It’s a low-calorie, delicious dish that comes together in one pot.

If you’re looking for an easy, healthy side dish, this is a great option!

I calculated this recipe as 6 (one cup) servings, which was 5 points per serving.

You could also do 12 (half cup) servings for only 3 points each.

What you need to make this recipe:

Most of these ingredients are things I always have on hand.

Orzo is a small pasta that is shaped like rice, and it is perfect for this recipe as it cooks quickly and absorbs all the flavors of the dish.

If you want to make it even healthier you could add in some spinach.

You could easily make this recipe vegetarian by using vegetable broth instead of chicken broth.

How to make One Pot Orzo Pasta with Tomatoes:

In a large skillet sauté the onion in olive oil for 2 minutes. Stir in the garlic, then the orzo.

Let the orzo toast for a few minutes, then add in the white wine.

Pour in the chicken broth and petite diced tomatoes (with their juice).

Add salt and black pepper, then bring to a boil.

Reduce heat to low, cover and let simmer for 12 minutes, stirring occasionally, until the orzo is cooked through and the sauce has thickened.

Stir in the chickpeas and let them cook for a minute or two to heat through.

Top with grated Parmesan cheese and fresh chopped basil, if desired.

This dish is a winner! Not only is it delicious, but it’s also low in points, making it a great WW friendly option.

Ingredients
  • 8 oz. uncooked orzo
  • 2 cloves garlic, minced
  • 1/2 small yellow onion, chopped
  • 1 teaspoon extra virgin olive oil
  • 1/2 cup white wine
  • 2 cups chicken broth
  • 14.5 oz. petite diced tomatoes with liquid
  • 15.5 oz. chickpeas
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil (optional)
