I love nachos! Not only are they delicious but there are so many toppings to choose from.
You can also make a healthy version that is still delicious.

How I lightened up Beef Nachos:
Instead of buying tortilla chips (that have been fried) I made my own.
I used Ole Xtreme high fiber tortillas that I cut into chip size pieces. Once they were all cut I put them in a single layer on a baking sheet, sprayed them with olive oil and baked them for 7-9 minutes.
The “chips” come out crunchy and delicious! I used 6 large tortillas which was 8 points, that’s way less than regular tortilla chips.
You can use ground turkey or shredded chicken, but my favorite is ground beef.
Using Laura’s lean ground beef, which is 96% lean ground beef helped to lighten it up. I used a 1/2 lb. which was only 6 points.
No nachos would be complete without cheese. I used one cup of reduced fat Mexican cheese which was 12 points.
I kept these nachos pretty simple by adding onions, tomatoes, jalapenos, and sour cream. I used fat free sour cream which added minimal points.
You could also add bell peppers, cilantro, lettuce, avocado, salsa, Pico, olives, black beans or refried beans.
How to make Beef Nachos:
The first thing I did was prepare the tortilla chips. Cut each tortilla into 8 chip size pieces.
Add the chips in a single layer to a baking sheet and spray them with olive oil spray. I had to use a couple of sheet pans for this step.
Bake the chips 7-9 minutes, or until they are crispy.
While the chips were baking I started browning the ground beef over medium heat.
Once cooked drain the grease and add the taco seasoning and water (according to the package directions).
Arrange all of the cooked chips on a baking sheet, they don’t need to be in a single layer for this.

Next, I added the seasoned ground beef.

Then I added the cheese and onions.

Bake the nachos 5-10 minutes, or until the cheese is melted.
Once the nachos are done baking you can add the rest of your toppings.

- 6 Ole Xtreme high fiber tortillas
- 1/2 lb. 96% lean ground beef
- 1 oz. taco seasoning
- 1/3 cup water
- 1 cup reduced fat Mexican cheese, shredded
- 1/4 cup red onion, chopped
- 1 tomato, sliced
- fat free sour cream, jalapenos, avocado, lettuce, bell peppers, cilantro, Pico, olives, black beans or refried beans (WW points are not calculated for these ingredients)

Preheat oven to 350 degrees F.

Cut each tortilla into 8 chip size pieces. Add the chips to a baking sheet in a single layer and spray with olive oil. Bake 7-9 minutes or until the chips are crispy.

While the chips bake brown the ground beef over medium heat. Drain the grease then add the taco seasoning and water. Cook for 3 minutes.

Add all of the tortilla chips to a baking sheet, they do not need to be in a single layer.

Top the chips with the seasoned beef, cheese and onion.

Bake 5-10 minutes, or until the cheese is melted. Add any additional toppings.
