I’ve been eating cabbage soup for years, ever since my mom would do the cabbage soup diet.
While I love cabbage soup, I don’t think I could follow the cabbage soup diet. You eat cabbage soup 2-3 times a day as well as a few other foods allowed.
I prefer having cabbage soup for lunch for a few days, then taking a little break from it.

It’s great for meal prep plus I think it’s even better the next day.
This cabbage soup recipe is filled with 0 point ingredients and you earn a point for the vegetables.

This soup also freezes well. There’s no dairy or starch in it so it’s very freezer friendly.
How to make Zero Point Cabbage Soup:
I make my cabbage soup on the stovetop in a Dutch oven.
To begin I get all of the vegetables chopped. You need cabbage, onions, celery and green pepper.
Add 4 cups of water to the Dutch oven and add the vegetables.
Bring the water to a simmer, then put the lid on the Dutch oven and let it cook for 10 minutes.
Remove the lid and add in the petite diced tomatoes and beef bouillon cubes. Let it come to a simmer, cover and cook 5 more minutes.
Once it’s done cooking I add salt and black pepper. If you like your food a little spicy you can add in a few drops of hot sauce or red pepper flakes.
This could easily be changed to a vegetarian version by swapping out the beef bouillon with vegetable bouillon.
The weather is about to cool down and I’m so excited to make more soup! I eat it all year long but I definitely eat it more when it’s cold out.

- 1 cup cabbage, chopped
- 1 cup yellow onion, chopped
- 1/2 cup celery, chopped
- 1/2 green pepper, chopped
- 4 cups water
- 29 oz. petite diced tomatoes (don't drain the liquid)
- 4 beef bouillon cubes
- Salt and pepper, to taste

Add the water, cabbage, onions, celery and green pepper to a Dutch oven. Bring to a boil, lower the heat to medium, cover and let cook for 10 minutes.

Add in the petite diced tomatoes and beef bouillon cubes. Bring the soup to a simmer, cover and cook 5 minutes. Taste the soup and add salt and pepper, if necessary.
