Chicken Tetrazzini

This lightened up Chicken Tetrazzini is much lower in points, but still full of flavor!

I have been making Chicken Tetrazzini for years, but the original version was too full of fat and calories. I knew I needed to lighten it up.

Regular Chicken Tetrazzini has a lot of butter in it, as much as a 1/2 cup. That would be 40 points just for the butter!

I ended up skipping the butter and I didn’t even miss it.

Instead of using regular cream of chicken condensed soup I used 98% fat free cream of chicken condensed soup. That saved 14 points!

Replacing regular sour cream with fat free sour cream saved another 32 points!

I didn’t have to make too many other changes to the recipe after that.

This is a perfect recipe to use a cooked rotisserie chicken!

Serving Suggestions:

One thing I love about this dish is it’s so filling, it makes picking a side dish easy.

I like to keep it simple and serve it with a low point salad, or roasted vegetables. Both are great options!

Chicken Tetrazzini is also great for leftovers. Simply place each leftover serving into an airtight container and place it into the fridge.

Ingredients
  • 16 oz. Spaghetti
  • 1 lb. boneless, skinless chicken breast, cooked
  • 2 (10/5 oz.) cans Campbell's condensed cream of chicken, 98% fat free
  • 2 cups fat-free sour cream
  • 1/2 cup chicken broth
  • 2 cups part-skim mozzarella cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • parsley (optional)
Instructions
  1. Preheat oven to 350 degrees F.

  2. Cook the spaghetti according to the directions on the box. Drain and set aside.

  3. In a large mixing bowl combine the cream of chicken, sour cream, chicken broth, garlic powder, salt and pepper. Stir in the chicken and 1 cup of mozzarella cheese, then the spaghetti noodles.

  4. Spray a 9×13 pan with no-stick cooking spray. Add the spaghetti mixture to the pan then top with the remaining mozzarella cheese. Bake for 50 minutes.
