If you’re looking for a low point side dish you need to try these cheesy zucchini rounds!
Not only are they low in points but they’re easy to make.
You can have two for 1 point. That’s with blue, green and purple.

And they’re topped with cheese! Cheese makes everything better. 🙂
Zucchini is a fruit but it’s usually treated like a vegetable. There is so much you can do with it!
It’s zero points which makes it a great option with Weight Watchers.
Instead of using noodles you can use zucchini and make “zoodles”. That’s a huge point saver!
You can also use it in lasagna instead of lasagna noodles.
For this recipe I simply mixed together reduced fat cream cheese, mozzarella cheese, Parmesan cheese and garlic powder.
I sliced the zucchini and topped each slice with salt and pepper, then added some of the cheese mixture to the top.
I baked them for 10 minutes, when the cheese was nice and melted.
These cheesy zucchini rounds are a great side if you want to indulge in a steak or something a little higher in points.

Yield: 24 (2 cheesy zucchini rounds is 2 points with blue, green and purple)
- 1 zucchini, sliced
- 2 oz. reduced-fat cream cheese, room temperature
- 1/4 cup part-skim mozzarella cheese, shredded
- 2 tablespoons Parmesan cheese, shredded
- 1/8 teaspoon garlic powder
- Salt and pepper, to taste

Preheat oven to 400 degrees F.

Spray a baking sheet with no-stick cooking spray. Add the zucchini slices and season with salt and pepper.

In a small bowl mix together the cream cheese, mozzarella cheese, Parmesan cheese and garlic powder. Stir until combined.

Top each zucchini slice with about 3/4 teaspoon of the cheese mixture. Bake for 10 minutes.
