These Banana Pudding Cupcakes are to die for!! And they are only 3 points each for blue, green and purple!
I recently posted a Banana Bread recipe. In it I talked about how my kids love banana bread, but my older daughter doesn’t even like bananas.
Well guess what? She also loves banana pudding. She just picks around the bananas. 🙂

I’ve been buying a lot of bananas lately. It’s one of the fruits the store by me actually has every time.
That got me thinking about what else I could make with bananas? Cupcakes!!
To keep this recipe low in points I used the Pillsbury sugar free classic yellow cake mix.
Instead of using eggs or oil I used Sprite Zero. That’s right, just the cake mix and Sprite Zero. I don’t know why it works, but it does!
You could also use Diet 7Up or any diet lemon lime soda.
I bought reduced-fat Nilla Wafers and put one in the bottom of each cupcake liner. Then I filled the cupcakes with batter like I normally would.
I also bought sugar free banana pudding. This is what I used as the frosting. I spread some right over the cupcake then topped it with fat-free Reddi Wip and a slice of banana.
This is probably my favorite cupcake ever!! It’s that good.
Now this does make 24 cupcakes, which is quite a bit. If you aren’t going to serve them all at once I would recommend waiting to add the pudding and Reddi Wip.

Yield: 24 cupcakes (3 points each for blue, green and purple)
- 1 box Pillsbury sugar free classic yellow cake mix
- 12 oz. Sprite Zero or Diet 7UP
- 24 reduced fat Nilla Wafers
- 1 (.9 oz) box sugar free banana cream pudding
- 2 cups skim milk
- fat-free Reddi Wip
- 2 bananas

Prepare cupcake pan with liners. Add one Nilla Wafer to the bottom of each.

Add cake mix and Sprite Zero to a mixing bowl. Use a mixer on medium speed for 2 minutes, then fill the cupcake liners with about 3 tablespoons of batter each.

Bake the cupcakes according to the directions on the box.

Prepare the pudding while the cupcakes are baking. Whisk together the pudding mix and milk for 2 minutes. Set aside to thicken.

Slice the bananas into thin pieces to put on top of the cupcakes.

Once the cupcakes have cooled add about 1 tablespoon of pudding and spread it evenly like it's icing. Add a tablespoon of Reddi Wip and top with a piece of banana. Enjoy!
