My kids both love banana bread. It’s kind of surprising to me since it was never something I really liked, especially as a kid.
What’s even weirder is my older daughter doesn’t even like bananas, but she loves banana bread!
I’m still not a huge fan of it, but I will eat it. I figured I would try to whip up a healthier version and see if they liked it.
Since they’re both die hard banana bread fans (and teenagers) I knew they would be honest with me.
To my surprise they both really liked it!!
There are a few things I did to lighten up my banana bread. First, I used unsweetened applesauce instead of oil.
The second thing I did to lighten it up was using sugar-free maple syrup.
I looked up regular banana bread on the app and it said 8 points. My banana bread recipe is only 3 points (per serving) for blue and purple, 4 points for green.
That’s a big difference!

The only bad thing about banana bread is you need to have ripe bananas. I try to keep ripe bananas frozen so if the urge arises I’m good to go.
Instead of throwing out ripe bananas I peel them, then slice them into 1″ pieces. I lay them on a parchment line baking sheet in a single layer, then freeze them.
Once they’re completely frozen I put them into a ziploc bag, then back into the freezer.
My kids make a lot of smoothies and the frozen bananas are great for that too.

Yield: 8 servings – 3 points per serving for blue and purple, 4 points for green

- 1 cup mashed ripe bananas (about 2 large bananas)
- 1/3 cup unsweetened applesauce
- 1/2 cup sugar-free maple syrup
- 1/4 cup skim milk
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 3/4 cup all purpose flour

Preheat oven to 350 degrees F.

Peel the bananas, add them to a mixing bowl and mash them.

Add the applesauce, maple syrup, skim milk, eggs, baking soda, vanilla extract, salt and cinnamon to the bananas. Stir together.

Next add the flour and stir until blended, but do not over stir it.

Spray your bread pan with no-stick cooking spray, then add the banana bread mixture.

Bake 50-55 minutes or until a toothpick inserted in the center comes out clean.
