These pork tacos are so good! The pork falls apart it is so tender… and it can be cooked in the Instant Pot or slow cooker!

I prefer cooking in the Instant Pot, but I know a lot of people still use the slow cooker. That’s why I included directions for both.
If you are on the fence about buying an Instant Pot I highly recommend buying one. It is so easy to use and it cooks food as good as the slow cooker in a fraction of the time.

I used pork tenderloin for these pork tacos. It’s my favorite pork to work with plus it’s lower in points than pork shoulder.
It’s tender to begin with, but by the time it’s done cooking it seriously falls apart.
The pork is 4 points for about 5 ounces. That’s for blue, green and purple.
I used Mission corn street tacos. They are only 1 point each. I had enough pork to fill 3 tacos, so I was up to 7 points.
I kept the extras for the tacos pretty basic. I used 1 tablespoon of fat-free sour cream which was 0 points, cilantro (0) and 2 tablespoons of reduced-fat Mexican cheese for 1 point.
All together my 3 tacos were 8 points. It was a filling and delicious meal!
Always double check your points even when following a recipe. 🙂

Yield: 6 servings (approximately 5 ounces of pork – 4 points for blue, green and purple. The points are for the pork only)
- 2 lbs. pork tenderloin
- 1 cup chicken broth
- 3 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 orange
- 1 lime
- 1 onion, sliced
- Mission corn street tacos (1 point each)
- Cilantro
- Reduced-fat Mexican cheese, shredded (check the points based on how much you use)
- Fat-free sour cream (check the points based on how much you use)

Cut pork into two inch pieces. Optional: spray a frying pan with cooking spray and sear pork on all sides.

Add the chicken broth, pork, seasonings, garlic and onions to the Instant Pot.

Cut the orange and lime in half, then squeeze the juice into the Instant Pot.

Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 45 minutes.

When the time is up let the pressure manually release for 15 minutes, then release the pressure and remove the lid.

Remove the pork and shred it. Place the pork back in the liquid until you are ready to serve it.

Cut pork into two inch pieces. Optional: spray a frying pan with cooking spray and sear pork on all sides.

Add the chicken broth, pork, seasonings, garlic and onions to the slow cooker.

Cut the orange and lime in half, then squeeze the juice into the slow cooker.

Place the lid on the slow cooker. Cook on high 4 hours, or low 6-8 hours.

Remove the pork and shred it. Place the pork back in the liquid until you are ready to serve it.
