French Dip

This French Dip is an easy meal that can be made in the Instant Pot or slow cooker!

The meat turns out so flavorful and tender. It’s absolutely delicious!

I usually do my grocery shopping at Kroger. This past week they had round roasts on sale buy one get one free. I couldn’t pass that up!

Roasts are something I don’t cook very often because they are higher in points. But I love them!

This recipe is also great for leftovers. I leave the meat soaking in the juices. It’s even more flavorful the next day.

I almost always cook with my Instant Pot now vs. the slow cooker. I know some people don’t want another kitchen appliance, but the Instant Pot also has a slow cook function.

Since this French Dip is a little higher in points I usually serve it with a side of 0 point vegetables. The sandwich itself is very filling.

I make my French Dip with 3 ounces of meat. It may not sound like much, but if you use a food scale to weigh it out you will be surprised.

The meat with 1/4 cup of the au jus is 5 points. The bread I used was an additional 4 points.

All together my sandwich was 9 points. A little higher than what I usually have, but well worth it.

That’s one of the things I love about Weight Watchers. If I know I’m having a meal higher in points I can plan around it.

French Dip – Instant Pot or Slow Cooker

3 ounces of beef plus 1/4 cup of the au jus is 5 points for blue, green and purple. If you are adding bread or a roll be sure to calculate additional points.

Ingredients
  • 1 Beef Round Roast
  • 1 onion, sliced
  • 2 cans Campbell's French onion soup, condensed
  • 2 cups beef broth
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper
Instructions
For the Instant Pot:
  1. Add the French onion soup, beef broth, onion, garlic powder and pepper to the Instant Pot.

  2. Slice the beef roast into 3 pieces, then add to the Instant Pot. (This helps to reduce the cooking time.)

  3. Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the meat button and set the time for 60 minutes.

  4. Let the pressure release naturally for 30 minutes. Remove the lid and shred the beef with a fork. If you are making a sandwich add 3 ounces of beef to bread and serve with 1/4 cup of the au jus.

For the slow cooker:
  1. Add all of the ingredients to the slow cooker. Leave the roast whole for the slow cooker.

  2. Cook on low 8 hours.

  3. Remove the lid and shred the beef with a fork. If you are making a sandwich add 3 ounces of beef to bread and serve with 1/4 cup of the au jus.
