This mug cake is a quick and easy recipe. It’s perfect for when you’re craving something sweet!
The recipe only makes one serving, which is good because you can’t overeat and go over in points. 🙂
It’s 4 Freestyle points for this peanut butter chocolate mug cake. Not bad for a filling dessert!
If you want to bump it down to 3 points you can leave out the chocolate chips.
I used 1 teaspoon of mini chocolate chips which was 1 Freestyle point. If you leave out the chocolate chips you can still get some chocolate flavor by adding sugar-free chocolate syrup once it’s cooked.
There are a couple of things I changed to make this mug cake low in points. One thing is I used apple sauce instead of oil. That saved 6 points!
Instead of using regular peanut butter I used PB2 powder. That saved 5 points.
What could have been a 15 point dessert is only 4 points. Just a few simple changes is all it took.
To make the mug cake I mixed together the PB2 powder with some water, then added the apple sauce, Splenda and egg yolk. I whisked it together, then added the flour and baking powder and stirred it.
I added the batter to a coffee mug that was sprayed with no-stick cooking spray and cooked it in the microwave for 1 minute 20 seconds.
I drizzled a little bit of sugar-free chocolate sauce and PB2 on top for some extra flavor.
You can also add some fat-free whipped cream and it won’t change the points.
Yield: 1 serving (Blue and purple 4 points, green 6 points)
- 2 tablespoons PB2 powder
- 1 tablespoon water
- 1 tablespoon applesauce (unsweetened)
- 1 egg yolk
- 2 tablespoons granulated Splenda
- 2 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1 teaspoon mini chocolate chips
In a small bowl mix together the PB2 powder and water. This should be creamy, not dry. Add a few extra drops of water if you need.
Add the applesauce, egg yolk and Splenda. Whisk together.
Add the flour and baking powder. Stir together. Add in the chocolate chips and stir again.
Spray a mug with no-stick cooking spray. Add the cake batter.
Cook in the microwave on high for 1 minute, 20 seconds.
