Celery….most people either love it or hate it. I am someone that loves it!
Even as a kid I loved to snack on celery. Back then I always had celery and peanut butter. It was one of my favorite after school snacks.
I still like to have celery as a snack but now it’s usually with cream cheese. I love this stuffed celery! There’s a little more to it than just cream cheese.
I use Good Seasons Italian dressing seasoning and mix it with the cream cheese. It is so good!! I love the flavor plus it’s a little salty which is perfect with the cream cheese and celery.
Good Seasons Italian dressing is my favorite Italian dressing. I think it is way better than any pre-made Italian dressing you can buy at the store. Plus it’s very easy to make, ready in less than 5 minutes.
For this recipe I did not make Italian dressing, I simply used the seasoning packet. I’ve also used the seasoning to sprinkle on chicken before I grill it. It’s so full of flavor!
I mixed 1 teaspoon of the seasoning with 1/2 cup light cream cheese and that was 11 Freestyle points. How much of the cream cheese mixture you use for your celery will determine how many points it is.
I usually use 2 tablespoons of the cream cheese each time I have the stuffed celery, with a pinch of reduced-fat cheddar cheese which is 3 Freestyle points. I usually have enough cream cheese for 2 large celery stalks. It’s a very filling snack.
The rest of the cream cheese mixture I put in an airtight container and keep it in the fridge for next time. It never goes to waste.
Since my husband follows a low carb diet this is one snack we can both have. That makes my life easier!
