Apple Pie Crepes – Weight Watchers Freestyle

This apple pie crepe would make the perfect Thanksgiving dessert!

Really this crepe is delicious any time of the year, but if you’re trying to stick to your points for Thanksgiving this would be good in place of apple pie.

These Apple Pie Crepes are only 2 Freestyle points per crepe!

A slice of apple pie will typically cost you 12-16 points. That’s a lot of points!! I think two points for an apple pie crepe sounds much more reasonable.

I also added fat-free Reddi Wip to the top of the crepe and some sugar free caramel sundae syrup.

The Reddi Wip was 0 points, but the caramel syrup added 1 point for 1 tablespoon. To me, it was worth the 1 point.

Another good idea is to serve the crepe with some low point vanilla ice cream. Halo Top vanilla ice cream is only 2 Freestyle points for a 1/2 cup. That would be a delicious dessert for only 4 Freestyle points.

I can’t believe it’s already November and almost Thanksgiving. I feel like it was just Summer!

Since Thanksgiving is only a couple of weeks away I want to start mentally preparing myself to not overeat.

In order to do that I’m trying to come up with ideas for healthier alternatives to some of my holiday favorites. Starting with this Apple Pie Crepe!

I also want to think of some healthy appetizers. Of course I can do a veggie tray, but I want some creative ideas as well.

I want to have the appetizers so I’m not starving when dinner rolls around. If I’m really hungry I will be more likely to overeat. That would be very dangerous on Thanksgiving. There’s food everywhere!

Yield: 12 Apple Pie Crepes (2 points per crepe for blue, green and purple)

Ingredients
For the crepes:
  • 1 cup all-purpose flour
  • 1 1/2 cups skim milk
  • 2 eggs
  • 1/2 teaspoon extra virgin olive oil
  • 1/2 teaspoon vanilla extract
For the apple filling:
  • 4 granny smith apples, peeled and chopped
  • Juice from 1/2 lemon
  • 2 tablespoons brown sugar
  • 2 tablespoons granulated Splenda
  • 1/2 teaspoon cinnamon
Instructions
  1. Combine the flour, milk, eggs, oil and vanilla extract in a blender. Mix together until the batter is smooth.

  2. Let the batter rest for 30 minutes.

  3. While the batter is resting add the apples and lemon juice to a saucepan. Cook on medium heat.

  4. Add the Splenda and cinnamon to a small bowl and stir together. Add the cinnamon mixture and the brown sugar to the apples. Let the apple mixture simmer for 5 minutes.

  5. Preheat an 8″ non-stick skillet for 5 minutes.

  6. Spray pan with non-stick cooking spray and add 1/4 cup of batter. Quickly turn the pan in all directions so the batter covers the entire pan.

  7. Let cook for about one minute. Use a rubber spatula to lift up the edge of the crepe and check if the bottom is cooked. Then flip over the crepe and let it cook another 20 seconds.

  8. Add about 1/4 cup of apple mixture to each crape.
