Today is October 9th and I’m officially in the Halloween spirit!
Even though it was 84 degrees today, I know the fall like temperatures will be back soon.
My neighbors have already started decorating with pumpkins and other fun fall things. I always wait until someone else starts decorating, I don’t want to do it too soon.
Halloween isn’t a day that I have a hard time sticking to my diet. Don’t get me wrong I love candy, but I’m more tempted by Thanksgiving and Christmas.
I thought this candy corn veggie tray was the perfect way to be festive and not eat candy.
I think presenting food in a fun way makes it more exciting, and it makes me less likely to want to grab a candy bar.
I tried to mimic the shape of the candy corn. I had bought triangle plates from Wayfair a while back so I used those.
Since the candy corn is white, orange and yellow I used cauliflower, baby carrots, and yellow peppers.
I love the color of these veggies together!
To go with the veggies I made an easy ranch dip. I simply mixed 16 ounces of fat-free sour cream with a packet of ranch dip mix.
The fat-free sour cream is great because you can have 1/4 cup for only 1 Freestyle point.
This appetizer can be made in about 15 minutes. I like to make the dip a couple hours ahead of time because I think it tastes better.

Candy Corn Veggie Tray
Ingredients:
- Cauliflower
- Baby carrots
- Yellow peppers
- 16 oz. fat-free sour cream
- 1 packet Hidden Valley Ranch Dip mix
Directions:
- Mix together the fat-free sour cream and ranch mix.
- Cut up cauliflower and yellow peppers into bite-size pieces.
- Arrange vegetables on a square dish. Put the cauliflower on top, baby carrots in the middle and yellow peppers on the bottom. Serve with ranch dip.
