Mini Cupcakes – 1 Freestyle Point Each

Are these cupcakes perfect for St. Patrick’s Day, or what!? And they are only 1 Freestyle point each. It doesn’t get much better than that. 

These mini cupcakes are easy to make and you can whip them up really fast.

I used Pillsbury sugar free cake mix and Sprite Zero for the cupcakes. The frosting is fat free Cool Whip mixed with green food coloring.

You can leave the food coloring out if you want, I just thought it would be fun for St. Patrick’s Day. Check out the recipe below!

This is an awesome mini muffin pan, you can make all 48 cupcakes at once!

Yield: 48 Mini Cupcakes (1 Freestyle point each)

Ingredients
  • 1 box Pillsbury sugar-free cake mix, classic yellow
  • 12 oz. Sprite Zero or Diet 7UP
  • 8 oz. Cool Whip, fat free, thawed
  • Green food coloring (optional)
Instructions
  1. Preheat oven to 325 degrees F.

  2. Line two mini muffin pans with mini cupcake wrappers. There should be 48.

  3. In a bowl, mix together cake mix and Sprite Zero. Whisk it for two minutes.

  4. Evenly divide the batter into the muffin pans. Bake 12-15 minutes, or until a toothpick is inserted in the middle and it comes out clean.

  5. Mix together the Cool Whip and good coloring. Allow cupcakes to cool, then add the Cool Whip.
