Mini Cupcakes - Weight Watchers Freestyle

- 1 box Pillsbury sugar-free cake mix, classic yellow
- 12 oz. Sprite Zero or Diet 7UP
- 8 oz. Cool Whip, fat free, thawed
- Green food coloring (optional)
Preheat oven to 325 degrees F.
Line two mini muffin pans with mini cupcake wrappers. There should be 48.
In a bowl, mix together cake mix and Sprite Zero. Whisk it for two minutes.
Evenly divide the batter into the muffin pans. Bake 12-15 minutes, or until a toothpick is inserted in the middle and it comes out clean.
Mix together the Cool Whip and good coloring. Allow cupcakes to cool, then add the Cool Whip.
