How to Make Low Carb Fried Cauliflower Rice

Heat a large nonstick skillet or wok over medium heat. Add the sesame oil.

Add the white part of the green onions and the garlic. Sauté for 30 seconds, then add the cauliflower rice. Cook for 5 minutes, stirring often.

Stir in the shredded carrots, chopped green beans, and soy sauce. Cook 2-3 minutes until the vegetables are just tender.

Make a well in the center. Add the two eggs and stir to scramble. Once the eggs are fully cooked, stir them into the cauliflower rice.

Garnish with green onions and serve hot.

Ingredients

  • 20 oz. cauliflower rice (fresh or frozen, thawed and squeezed dry)
  • 2 large eggs
  • 1 tablespoon sesame oil
  • 1/2 cup shredded carrots
  • 1/2 cup fresh green beans, chopped into 1/2 inch pieces
  • 1/2 cup green onions, divided (separate the white and green parts)
  • 2 tablespoons low-sodium soy sauce
  • Salt and pepper, to taste

Instructions
