Copycat Starbucks Egg Bites (Low Carb and Weight Watchers Friendly)
If you love Starbucks egg bites but don’t love the carbs, points, or price, this homemade version is about to become your new go-to breakfast.
These egg bites are ultra-creamy, low carb, and easy to make at home. Perfect for busy mornings or weekly meal prep.
Unlike traditional egg muffins, this recipe blends eggs with cottage cheese to recreate that signature Starbucks texture while keeping everything low carb and Weight Watchers friendly.

The Ingredients
Eggs: Eggs are a powerhouse ingredient, providing high-quality protein that helps keep you full longer. They’re naturally low carb and support muscle maintenance, making them ideal for Weight Watchers and low carb eating.
Low-Fat Cottage Cheese: Cottage cheese is the secret to achieving that creamy Starbucks-style texture without using heavy cream. It adds extra protein and calcium while keeping fat and points lower.
Monterey Jack Cheese: Although Gruyère is used in the Starbucks egg bites I went with Monterey Jack since it’s more affordable and lower in fat and calories.
Center Cut Bacon: This provides smoky flavor with less fat than traditional bacon. It also helps to keep the egg bites low in points.
Seasonings: Using simple seasonings like salt, pepper, garlic powder, and onion powder enhance flavor without adding carbs, calories, or points.

How to Make Low Carb Copycat Starbucks Egg Bites
Preheat oven to 300 degrees F. Use a silicone muffin pan for this recipe so the egg bites easily pop out.
Add eggs and cottage cheese to a blender and blend until completely smooth.
Stir in the shredded cheese and seasonings.
Divide the mixture evenly among 8 of the silicone muffin cups.
Place the muffin pan into a larger baking dish and fill with hot water halfway up the sides to create a water bath.
Bake 30-40 minutes, or until the center is just set.
Cool slightly before removing and serving.
