Starbucks Copycat Egg Bites (Low Carb and Weight Watchers Friendly)

Ingredients

  • 6 eggs
  • 1/2 cup reduced-fat cottage cheese
  • 1/2 cup Monterey Jack cheese, shredded
  • 4 slices center cut bacon, cooked and chopped
  • Salt and pepper, to taste
  • Pinch of garlic powder and onion powder

Instructions

  • Preheat oven to 300 degrees F. Use a silicone muffin pan for this recipe so the egg bites easily pop out.
  • Add eggs and cottage cheese to a blender and blend until completely smooth.
  • Stir in the shredded cheese and seasonings.
  • Divide the mixture evenly among 8 of the silicone muffin cups.
  • Place the muffin pan into a larger baking dish and fill with hot water halfway up the sides to create a water bath.
  • Bake 30-40 minutes, or until the center is just set.
  • Cool slightly before removing and serving.
