Preheat oven to 300 degrees F. Use a silicone muffin pan for this recipe so the egg bites easily pop out. Add eggs and cottage cheese to a blender and blend until completely smooth.
Stir in the shredded cheese and seasonings.
Divide the mixture evenly among 8 of the silicone muffin cups.
Place the muffin pan into a larger baking dish and fill with hot water halfway up the sides to create a water bath.
Bake 30-40 minutes, or until the center is just set.
Cool slightly before removing and serving.
