Salisbury Steak with Gravy Low Carb Weight Watchers Recipe

The Ingredients

Lean Ground Beef: Lean ground beef is high in protein, which helps keep you full and satisfied. Using 93% lean reduces saturated fat while still providing iron, zinc, and B vitamins that support energy and metabolism.

Onion: Onions add natural sweetness and flavor without added sugar. They’re low in calories, contain antioxidants, and help add flavor to the beef and gravy.

Eggs: Eggs act as a natural binder for the patties and provide high-quality protein, vitamins, and healthy fats, all while keeping carbs extremely low.

Aunt Millie’ Live Carb Smart Bread: Using one slice of this bread to turn into breadcrumbs is a smart swap that keeps the classic Salisbury steak texture while staying low carb and Weight Watchers friendly.

It provides structure and moisture to the patties without the carb load of traditional breadcrumbs.

Worcestershire Sauce: A little goes a long way. Worcestershire sauce adds deep umami flavor, allowing you to use fewer ingredients while still getting that classic steakhouse taste.

Beef Broth: Beef broth builds rich, savory flavor while keeping the dish lighter than cream-based gravies. Choosing low sodium helps control salt intake.

Mushrooms: Mushrooms are a nutritional powerhouse that add volume, texture, and savory umami flavor for very few calories. They’re low in carbs, fat-free, and contain antioxidants, B vitamins, and minerals like selenium.

Cornstarch: A small amount thickens the gravy without needing flour. It’s optional and easy to adjust based on your carb goals.

How to Make Low Carb Salisbury Steak

Toast the bread until crisp, then pulse or crush into fine breadcrumbs.

In a large bowl, combine ground beef, chopped onion, egg, breadcrumbs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Gently mix and form into 4 oval patties.

Heat a large nonstick skillet over medium heat. Cook patties for 4–5 minutes per side until browned and cooked through. Remove and set aside.

Without cleaning the pan, add the mushrooms and onion. Cook for 6-8 minutes, stirring often, until softened.

Pour in beef broth, Worcestershire sauce, garlic powder, and onion powder. Scrape up browned bits and simmer for 3–4 minutes.

Stir in cornstarch slurry and simmer 1-2 minutes until gravy thickens slightly.

Return patties to the skillet, spoon gravy over the top, and simmer for 2–3 minutes before serving.
